Grey Mullet Bottarga is a food obtained by drying the ovary sac of mullets. The mullet roes are extracted, salted, pressed and finally dried to obtain the so-called amber Bottarga with an intense flavor. Bottarga is eaten sliced or grated, as it is mainly used on first courses, but also on croutons or seafood appetizers.

BLUEFIN TUNA BOTTARGA

It is a delicious product that can be enjoyed cut into thin slices seasoned with plenty of extra virgin olive oil and accompanied with sliced bread. Tuna bottarga is also excellent grated, to season spaghetti or to enrich canapes with butter.
Its flavor is stronger than Grey Mullet Bottarga and is generally saltier.

Mr. Moris' smoked fish are the result of careful craftsmanship on selected raw materials, coming from fishing areas whose supply chain is traced and certified.
The salting phase lasts between 12-24 hours and then the fish fillets are washed and placed to dry at about 24 ° C. We then proceed to the actual smoking phase.
You can have more or less strong colors that depend on the species of fish, the fishing period and the smoking procedure.

Marinating is a procedure as simple as it is delicate, it is present in all the gastronomic cultures. It is performed both for recipes with raw fish and for preparations that provide cooking. It is done on fresh raw material, using parsley, oil, vinegar, lemon juice and salt.
