Mr. Moris’ smoked fish are the result of careful craftsmanship on selected raw materials, coming from fishing areas whose supply chain is traced and certified.
The salting phase lasts between 12-24 hours and then the fish fillets are washed and placed to dry at about 24 ° C. We then proceed to the actual smoking phase.
You can have more or less strong colors that depend on the species of fish, the fishing period and the smoking procedure.
Smoked fish are served in different ways, but each time they constitute a very appetizing dish, light and rich in nutritional properties, as they guarantee a high intake of Omega 3 and proteins.
Ideal as an appetizer, simply seasoned with oil, lemon and some herbs and then served accompanied by slices of lightly toasted homemade bread.
Norwegian smoked salmon is a loved food by Italians and around the world. Mr. Moris chooses its salmon from selected Norwegian farms. The processing follows skilled hands and focuses in raw material selection to obtain soft, sweet, tasty and delicate meats.
Salmon is a source of proteins, vitamins, B6 and B12, thiamine, niacin, mineral salts, in particular phosphorus, selenium and omega 3 fatty acids. It is ideal for refined recipes, for risottos, simply on toasted whole meal bread with cream cheese.
Swordfish is one of the best known and widespread fishery product, but also one of the most valuable, thanks to the low-fat and pleasant meats.
Mr. Moris Smoked Swordfish is produced using only the best selected Swordfish fillets to which are added salt and flavorings, and then smoked using beech wood.
It contains good percentages of essential fatty acids and is an extremely protein food. Being particularly low-fatty, it has a low calories intake and the few fatty acids it contains are mainly of the essential polyunsaturated type of the omega 3 group. It also has a low cholesterol content.

SMOKED YELLOWFIN TUNA
Yellowfin Tuna owes its name to the characteristic yellow color on the tip of the fins; its average weight is around 40 kg and the length is just over one meter. It has pink flesh and darker streak, they live in herds. It is a pelagic and highly migratory species.
Fishing for this tuna is not tied to a specific period, but takes place throughout the year. The ships used are equipped with cold storage, which preserves their conservation, thus maintaining the characteristics of the fish, up to the return to land.
It is excellent as an appetizer, easy and quick to prepare even in advance, it is a light dish with a particular flavor, ideal for those who want to eat with taste. It is a source of Omega 3, it gives a low intake of calories, but it is rich in proteins and vitamins.
SMOKED YELLOWFIN TUNA WHOLE
Mr. Moris Smoked Yellowfin Tuna is produced using only best selected tuna to which are added salt and aromas and smoked using beech wood.
OCTOPUS CARPACCIO
Mr. Moris’sOctopus Carpaccio is a delicate, genuine and light specialty, ideal for appetizers or fast main courses represents a real delicacy. Octopus is rich in proteins with high biological value and poor in fat. It has a low-calorie intake which makes it suitable for low calorie diets.
It has significant amounts of iron, calcium, phosphorus and potassium.
It is produced, using octopuses mainly Octopus Maya, which is added only a pinch of salt and aromas. The product is then marinated and finally is packaged in a protective atmosphere that allows keep the same fragrance and softness of the freshly sliced product.
